Vin Santo (desert wines) & Grappa

Vin Santo (= holy wine) desert wines are produced with late harvested grapes, similar to the so called ice wines. Unlike the ice wine, the grapes do not wither on the vines, but are stored in the cellar in order to dry them out, so they raise their content of sugar. It can be kept for many decades and doesn’t go bad, once opened. That’s why people call it holly.
